tasting notes
Comprised mostly of Cabernet Sauvignon, it initially appears as a reticent, ripe, intense but nevertheless fruit driven. Aromas of black cherry, blueberry, vanilla and pumpkin spice wrapped beautifully make it very enticing. Cabernet Franc adds a dimension of silkiness and a touch of Syrah lends sweetness to the finish. What start as a bowl of blackberry and cherry compote notes with subtle oak slowly opens up to reveal a well-integrated complete wine. With a few hours of aeration, it gains body and complexity as oak emerges. It has elegance and silkiness but plenty of concentration to last 10 years easily. Once you try a bottle, it would be difficult to stay away. It should prove to be a versatile wine in much the way a Pinot Noir would be but first and foremost, it begs for a roast.
